Potato and Kumara Rösti

Rösti is made with cooked or raw coarsely grated potato and depending on the frying technique other fats are added such as butter seasoned with salt and pepper.


Ingredients make 12

2 eggs
½ cup plain flour (80g)
1 tsp salt
½ tsp ground black pepper
4 grated potatoes (650g)
2 cups grated Kumara (300g)
6 finely chopped spring onions
Oil for frying

Method

Whisk eggs, flour, salt and pepper together in a large bowl. Add potatoes, kumara and spring onions and mix evenly. Divide the batter into 12 even portions. Heat some oil in a frying pan over medium heat. Place some of the rosti in the hot pan and cook for approx. 5 minutes on each side. Remove from the pan and keep warm in the oven. Continue until all the batter is used.


Note: You can also make two large rosti by filling half the mixture in a frying pan and cook for 10 minutes on medium high and flip over and cook for another 10 minutes.
