Butter and White Chocolate Biscuits

These sweet biscuits are perfect for afternoon tea or to use as crumbs for a cheesecake.


Ingredient make 40 biscuits

125 g soft butter
110 g caster sugar
1 egg (50g)
1 tsp vanilla extract
80 g self raising flour
220 g plain white flour
90 g finely chopped white chocolate

Method

Preheat the oven to 180° C normal bake. Place butter and sugar in a mixing bowl, blend until evenly mixed. Mix in the egg and vanilla. Add flours and mix to form a dough. Add white chocolate and mix evenly. Make 20 gram small round balls and place on a paper lined baking tray with spaces in between. Press the balls slightly on top and place the tray in the oven. Bake for approx. 12 minutes until golden brown.


Note: Try other ingredients instead of white chocolate such as finely chopped nuts or sultanas.
