Wholemeal Damper

This very easy simple quick bread is terrific for breakfast or served with soup.


Ingredients make 1 loaf

400 g wholemeal self raising flour
90 g butter
250 ml water

Method

Preheat oven to 200°C normal bake. Place water and butter in a small pot on medium heat stirring until butter is melted. Allow cooling before placing into a large mixing bowl, add flour. Mix until evenly combined and mould into a 20 cm round shape. Dip in wholemeal flour and place on a baking tray. Make several cross cuttings on top and bake in the oven for approx. 30 minutes. Allow 20 minutes cooling before cutting.


Note: Try adding other ingredients such as dried fruit and nuts.
