Almond and Pistachio Cookies

These cookies are excellent for afternoon tea or as a snack.


Ingredients makes 28 cookies

450 g butter
280 g caster sugar
1 egg
450 g plain white flour
225 g chopped almonds
225 g chopped pistachio nuts

Method

Preheat oven to 180° C normal bake (160° C fan forced). Mix butter and sugar in a bowl. Add egg and mix evenly. Add flour and combine. Add almonds and nuts, mix evenly. Make cookies at 60 grams and place on baking paper lined trays. Bake in the oven for approx. 12 minutes. Allow cooling before placing in an airtight container.


Note: Try other nuts such as pecan and macadamia.
