Apple and Sultana Cake

A delicious apple cake is classic as a dessert or warm from the oven for afternoon tea.


Ingredients serve 6 - 8

90 g soft butter
110 g caster butter
1 tsp vanilla extract
1 eggs (50g)
180 ml milk
225 g self raising flour
200 g peeled and diced apple
80 g sultanas

Method

Preheat oven to 180°C normal bake. Lightly grease a high 20 cm round cake tin and line with baking paper. Place butter, sugar and vanilla in a large mixing bowl, whisk with an electrical mixer until light and fluffy. Add egg and incorporate. Blend the milk into the mix. Fold the flour into the batter until uniformly. Blend apples and sultanas evenly into the mix. Place the batter equally in the prepared cake tin. Drizzle the top of the batter with cinnamon sugar. Bake in the oven for approx. 40 minutes. Allow cooling before removing from the cake tin. Serve with custard and whipped cream.


Note: Try pear instead of apple and dried blackcurrants instead of sultanas.
