Cheese and Chive Wholemeal Damper

This is a pleasurable easy bread to make and superb served with soup.


Ingredients make 1 loaf

300 ml buttermilk
1 egg (50g)
1 bunch finely chopped chives (10g)
120 g shredded cheddar cheese
400 g wholemeal self raising flour

Method

Preheat oven to 200°C normal bake. Place buttermilk and egg in a large mixing bowl and whisk evenly. Add chives and cheddar cheese and combine. Add flour and blend until evenly combined. Mold into a 20 cm round bowl and dip in wholemeal flour. Place the dough on a baking tray and make several cross cutting on top. Bake in the oven for approx. 30 minutes. Allow 20 minutes cooling before cutting.


Note: Try adding finely chopped parsley with the chives.
