Parsley and Macadamia Crusted Baked Salmon

This stunning herb and nut crumbed salmon steak is wonderful for dinner any day of the week.


Ingredients serve 4

2 slices wholemeal bread
⅓ cup finely chopped parsley
⅓ cup finely chopped macadamia nuts
¼ cup butter
⅓ cup grated tasty cheddar cheese
4 skinless salmon steaks

Method

Preheat oven to 200°C normal bake and grease an oven tray.  Place bread in a food processor and process until roughly chopped. Add parley, macadamia nuts, butter and cheese, process until combined. Place salmon in the prepared dish and press the mixture on top. Bake for approx. 15 minutes. Place on the plates and drizzle the juice over the fish. Serve with horseradish white sauce and steamed vegetables.


Note: This baked salmon can also be served with a fresh garden salad, other herbs and nuts can be used instead of parsley and macadamia such as basil and pecan nuts.
