Cacao and Dark Chocolate Chip Muffins

These delicious chocolate muffins are great any time of day.


Ingredients make 9

2 eggs
220 g caster sugar
110 g self raising flour
40 g cacao powder
1 tsp vanilla essence
160 ml milk
150 g melted butter
120 g dark chocolate chips

Method

Preheat the oven to 180ÂșC normal bake. Place eggs and caster sugar in a large bowl and whisk until creamy. Add flour, cocoa powder, vanilla, milk and combine. Fold the melted butter into the mixture. Add chocolate chips and combine. Place mixture in paper lined muffin tin and bake for approx. 30 minutes. Allow cooling for 10 minutes before removing from the tin.


Note: Try white or milk chocolate chips instead of dark and add toasted nuts.
