Carrot Glazed Ginger and Walnut Scones

These delicious spicy sweet scones are perfect served warm with butter for morning tea.


Ingredients make 15

470 g self raising flour
2 tsp mixed spice
10 g salt
100 g butter
70 g brown sugar
200 g milk
200 g shredded carrot
70 g glazed ginger finely chopped
100 g walnut finely chopped

Method

Preheat oven to 200ÂșC fan forced (220C normal bake). Place flour, mixed spiced and salt in a bowl, combine. Cut butter in small cubes and rub into the flour mix with your hands. In another bowl combine sugar, milk, shredded carrot, ginger and walnut. Add this mix to the flour and combine with a scraper or hands. Don’t over mix which will make the scones tough. Place on a workbench dusted with flour and roll or press out to a thickness of approx. 25 mm. Cut scones with a cutter 5 cm. in diameter. Place on lightly greased flat baking tray. Bake in the oven approx 12 min. Dust with icing sugar.

Note: If you don’t have glazed ginger try chopped dates or sultanas.
