Spinach and Cheese Sausage Rolls

These vegetable and cheese sausage rolls are great as snacks anytime of the day and excellent for parties as smaller size sausage rolls.


Ingredients make 10

140 ml water
110 g bread crumbs
20 g finely chopped onion
4 g Salt
1 g black ground pepper
2 g mixed dried herbs
400 g frozen spinach (defrosted overnight in the fridge)
200 g shredded cheddar cheese
400 g puff pastry

Method

Place water, bread crumbs, onion, salt, pepper and herbs in a bowl and mix evenly. Add spinach and blend uniformly. Fold cheese in and mix until evenly combined. Pipe mixture onto sheets of puff pastry and make a roll. Cut in 10 cm long rolls and brush with water. Sprinkle breadcrumbs, sesame or poppy seeds on top and put the rolls on baking paper lined trays. Bake in the oven on 180ยบ C approx. 25 min.

Note: Add more flavours by using ingredients such as toasted pine nuts and try with other cheeses such as ricotta, feta, gruyere or Danish blue.
