Easy Cheese Focaccia

This is definitely an easy bread to make and the simple method is basically the same as mixing a cake.


Ingredients

340 g lukewarm water (40ºC)
35 g olive oil
1 tsp salt
420 g unbleached plain or bread flour
1 packet instant yeast (7g)
120 g shredded tasty cheddar cheese

Method

Lightly grease a 24 x 34 cm cake pan with olive oil. Place water, oil, salt, flour and yeast in a bowl. Mix with a large spoon for approx. 60 seconds. Add the cheese and combine evenly. Place the mixture evenly in the grease pan with the spoon and cover. Allow proofing for approx. 60 minutes and preheat the oven to 180ºC normal bake. Gently poke the dough with your finger all over. Drizzle olive oil and sprinkle some mixed herbs or seasoning on top. Bake in the oven for approx. 30 minutes. Remove from the tin and allow cooling on a wire rack. Cut and serve while still warm.

Note: Try other cheese such as parmesan, feta, provolone or a combination of these.
