Mascarpone Trifle

This is an Italian inspired trifle packed full of flavours.

Ingredients make 8

Madeira cake
Frangelico
Lemon jelly
1 egg yolk
2 tbls caster sugar (30g)
200 g mascarpone
½ tsp lemon rind
5 g toasted almond slivers

Method

Place some madeira cake in the bottom of 8 dessert glasses and drizzle with some Frangelico. Place some lemon jelly on the cake. Whisk mascarpone in a bowl. Whisk egg yolk with caster sugar in a separate bowl until light and fluffy. Add lemon rind and mascarpone and place on top of the jelly. Place some toasted almond slivers on top and sift icing sugar on top. Serve straight away or keep in the fridge until serving.

Note: Use any type plain type of cake or biscuit if you don’t have madeira cake
