Lemon Yo Yo Biscuits

These small classic sweet eggless biscuits sandwiched with a lemon icing, known as Yoyo’s in Australia, are the ultimate sweet for any tea party.

Ingredients make 25

125 g soft butter
¼ cup icing sugar (45g)
¾ cup plain flour (115g)
⅓ cup custard powder (50g)

Method

Preheat oven to 160°C.  Place butter and icing sugar in a bowl and beat with an electric mixer until light and creamy. Mix in flour and custard powder until evenly combined. Divide dough into small 7 g pieces. Roll into small balls with your hands and place on a baking paper lined tray. Flatten slightly with your fingers and use a fork to make a mark on top. Bake in the oven for approx. 12 minutes or until just cooked through. Remove from oven and allow cooling.

Lemon Filling

60 g soft butter
⅔ cup icing sugar (110g)
½ lemon grated rind and juice

Method

Place butter and icing sugar in a bowl. Beat using an electric mixer until light and creamy. Add lemon rind and juice, mix until evenly combined. Pipe or spread the lemon filling on the flat side of half the biscuits and sandwich together with remaining biscuits.

Note: Use cornflour, vanilla essence and yellow colour as a substitute for custard powder, lime or orange can be substituted for lemon.
