Strawberry Custard and Cream Cake

Strawberry is an extensively used fruit in cooking and especially in desserts. This popular sweet, juicy, red fruit with a subtle touch of sourness contains a lot of vitamins and minerals to facilitate a balanced, healthy diet.

Ingredients serve 14 -16

800 g whipped cream
800 g vanilla sponge
200 g finely chopped strawberries
150 g strawberry coulis
1100 g custard
14 strawberries dipped in dark chocolate

Method

Cut the 30 cm round vanilla sponge horizontal in three layers. Place the bottom layer sponge on a cake tray and spread evenly 75 g strawberry coulis. Mix custard and chopped strawberries and spread half evenly on top of the strawberry coulis. Place another sponge layer on the custard layer and spread evenly 75 g strawberry coulis. Spread the remaining custard mix evenly on the coulis and place the last sponge layer on top of the custard. Cover the cake by piping on whipped cream. Divide and cut the cake into 14 pieces. Decorate the top with whipped cream and place a chocolate dipped strawberry on each slice.

Note: Try other fruit instead of strawberries such as raspberries, blackberries and blueberries.
