Fruit Tarts

We all appreciate a fresh fruit cake and this one has a crispy base, fresh fruit, custard and fresh fruit with jelly glaze.

Ingredients

Shortbread shells
Vanilla custard
Strawberries
Pineapples
Blueberries
Jelly or jam

Method

Fill some tart tins with shortbread and bake in the oven at 180ºC for approx. 12 minutes. Take the baked shortbread tarts out of the tins, allow to cool and place a dollop of custard into each tart. Place fruit on the custard as you wish. Make some jelly and brush over the fruit. Or melt some jam in a pot and glaze the tart.

Note: Use all kind of fresh berries available such as blackberries, blueberries, raspberries or a mixture.
