Goose Breasts

Gåsebryst is the Danish name for this admired cream cake. When I did my training it was an important cake for sale at least every Sunday.

Ingredients

Sponge sheet
Vanilla custard
Whipped cream
Chocolate
Strawberry jelly
Strawberry jam
Marzipan

Method

Spread some strawberry jam on a sheet of sponge and place another sponge sheet on top. Cut a strip 8 cm wide and pipe some custard in the middle surrounded by whipped cream formed like a dome. Roll some marzipan out and cover the cream. Melt some chocolate and pipe on top of the marzipan. Cut into pieces and decorate each piece with a rosette of whipped cream and a square piece of jelly.

Note: Use blackberry, blueberry or raspberry jelly and jam instead of strawberry.
