Banana Custard Layer Cake

Banana is a commonly used fruit in cooking and especially in desserts. This popular pale, sweet and starchy fruit with a subtle touch of sourness contains vitamins and minerals to facilitate a balanced, healthy diet.

Ingredients serve 14 -16

800 g whipped cream
800 g vanilla sponge
400 g finely chopped bananas
1100 g custard
Malibu liquor
Toasted coconut

Method

Cut the 30 cm round vanilla sponge horizontal in three layers. Place the bottom layer sponge on a cake tray and drizzle with some Malibu liquor. Mix custard and chopped banana and spread half evenly on the sponge. Place another sponge layer on the custard layer and spread the remaining custard mix evenly. Place the last sponge layer on top of the custard and spread a layer or whipped cream. Sprinkle some toasted coconut. Pipe whipped cream on the outside of the cake and divide and cut the cake into pieces.

Note: Try other fruit instead of banana such as mango, peach and apricot.
