These wholesome date muffins with wonderful flavours are
perfect for any time of the day.
Ingredients make 10 muffins
160 g wholemeal flour
160 g plain white flour
2 tsp baking powder
½ tsp salt
½ tsp ground cinnamon
170 g pumpkin puree
80 g brown sugar
75 g honey
80 ml vegetable oil
125 ml orange juice
2 eggs
120 g chopped pitted dates
50 g chopped pecan nuts
Method
Preheat the oven to 160°C normal bake. Place flours, baking
powder, salt and cinnamon in a large bowl and mix evenly. Place pumpkin puree,
brown sugar, honey and oil in a large mixing bowl and whisk until smooth. Add
orange juice and eggs, blend until combined. Add dates, nuts and flour mixture.
Mix until consistently combined. Spoon the batter into paper cup filled muffin
tins. Bake in the oven for approx. 25 minutes. Allow the muffins to cool in the
tins for 5 minutes before removing.
Note: Try other
fruit and nuts instead of dates and pecan such as sultanas and macadamia nuts.
