Buttermilk and Orange Bundt Cake

This wonderful classic orange cake is baked in a traditional Bundt tube pan and is great for afternoon tea.


Ingredients serve 10

250 g soft butter
450 g caster sugar
4 Eggs
250 ml buttermilk
2 orange, zest and juice
480 g plain white flour
½ tsp baking soda

Method

Preheat the oven to 160ÂșC normal bake. Place butter and sugar in a mixing bowl and beat until light and creamy. Add eggs, one at a time and beat after each addition. Add buttermilk, orange juice and zest. Combine flour and baking soda. Add flour mixture and mix. Pour the finished batter into a greased bundt tin. Bake in the oven for approx. 60 minutes. Remove from the oven and turn upside down on a tray with a piece of baking paper. Leave the tin on until the cake has completely cooled approx. 1 hour. Dust with icing sugar and serve.

Note: Try other citrus fruit such as lemon or lime instead of orange.
