Lemon Choux

Lemon choux balls are a delicious elegant dessert and easy to make at home.


Ingredients

Choux pastry
Lemon custard or curd
Whipped cream
Lemon slices

Method

Preheat oven to 200ÂșC. Make a choux paste and put in a piping bag with a star nozzle. Pipe mixture onto lightly greased baking trays and bake in the oven for approx 20 minutes. Allow cooling before cutting in horizontal in half. Place the bottom half on a plate and pipe a dollop of lemon curd. Top with whipped cream and a slice of lemon. Place the top on the cream and dust with icing sugar.


Note: Substitute lemon curd with other citric fruit curd such as orange or lime.
