Buttermilk and Oat Muffins

These tasty muffins are great for in between meals.


Ingredients make 6

100 g quick oats
250 ml buttermilk
1 egg (50g)
90 g brown sugar
½ tsp salt
1 tsp mixed spice
50 ml vegetable oil
160 g self raising flour
1 tsp baking soda

Method

Preheat oven to180°C normal bake. Place oats and buttermilk in a bowl and combine. Add egg, sugar, salt, mixed spice and oil, mix together. Add flour and baking soda and mix until even. Fill mixture in paper lined muffin tin and bake for approx. 25 minutes. Allow cooling for 10 minutes before removing from the tin.


Note: Add other ingredients such as chopped apples or berries.
