Walnut and Seed Bread

This is a delicious healthy bread with essential fatty acids, calcium and iron.


Ingredients make 1 loaf

500 g wholemeal flour
1 sachet dried yeast (7g)
2 tsp salt (12g)
100 g mixed seeds such as flax, poppy, sesame and pepita
85 g chopped walnuts
375 g lukewarm water

Method

Place flour, yeast, salt, seeds and walnuts into a large bowl and blend evenly. Add water and combine. Knead the dough by hand or machine until smooth. Place the dough in the bowl and rest covered for approx. 80 minutes. Remove the dough from the bowl and place on a lightly floured kitchen table. Deflate the dough and shape into a ball shape. Roll the dough in wholemeal flour and place on a baking tray. Place a towel on top and let the dough rise approx. 60 minutes. Preheat oven to 220º C. Remove the towel and make cutting with a sharp knife. Place the tray in the oven and bake for 15 minutes. Lower the heat to 190º C and bake for further 25 minutes. Remove the bread from the oven and allow cooling for at least 30 minutes on a wire rack before cutting.


Note: Try rolling the dough in sesame seeds instead of flour.
