Pan Fried Salmon and Broccoli Mash

Pan fried salmon is an inexpensive quick and easy delicious dinner to make at home.


Ingredients serve 4

200 g roughly chopped broccoli
600 g peeled and chopped potatoes
60 g butter
1 tbls fresh thyme leaves
100 ml cream
½ tsp sea salt
¼ tsp white pepper
4 salmon fillets
½ bunch finely chopped dill
Olive oil

Method

Place the potatoes in a saucepan covered with salted water over medium heat and bring to the boil. Simmer for 10 minutes and place a steam colander on top of the water. Add broccoli and cover, cook for further 10 minutes. Place cream, butter, salt and pepper in a saucepan over medium heat until mixture is warm, but not boiling. Drain the potatoes and broccoli and pass through a ricer or mash with a potato masher. Add the liquid mixture while stirring. Cover and keep mash warm.  Place dill and oil in a mortar and blend to a paste. Place 2 tbls butter in a large frying pan over medium heat and fry salmon fillet for 3 minutes. Turn the fish and cook for 1 minute or until cooked to your taste. Place broccoli mash on the plate and position a salmon fillet on top. Spread some dill paste on top and drizzle with the pan fat over the salmon. Serve straight away.


Note: Try salmon fillet with skin and rub with white pepper.
