Creamy Mushroom Soup

This creamy mushrooms soup is wonderful in flavour and is perfect on any day of the year as a starter.


Ingredients serve 6

200 g sliced button mushrooms
60 g chopped green shallots
375 ml dry white wine
500 ml chicken stock
¼ tsp dried thyme
½ tsp white pepper
½ tsp salt
250 ml cream

Method

Place all ingredients except the cream in a medium saucepan over medium heat and bring to the boil. Simmer covered for 60 minutes and blend with a stick blender or in a food processor. Add cream and reheat. Serve with crusty bread.


Note: Try adding other dried herbs to this soup such as oregano, basil and sage.
