Cheesy Potato Damper

This moist bread is very easy to make and is ideal with soup or for a sandwich.


Ingredients serve 4

30 g soft butter
1 cup mashed potato (300g raw potatoes)
1 tsp salt
½ tsp white pepper
1 egg (50g)
250 ml milk
120 g grated cheddar cheese
480 g self raising flour

Method

Preheat oven to 220ºC normal bake. Place butter, mashed potato, salt, pepper, egg, milk and cheese, mix until combined. Add flour and mix until dough is firm without over mixing. Form the dough into a round ball and dip in flour. Place the ball with the seam down on a paper lined baking tray and cut two slashes across with a sharp knife. Bake in the oven for 20 minutes and 30 minutes on 190ºC. Allow cooling on a wire for at least 15 minutes before cutting.


Note: Try adding dried herbs such as oregano, thyme, basil, parsley and sage.
