Thyme and Garlic Mashed Potatoes

I absolutely love the flavour, texture and appearance of any well made potato mash and this mash is great served with beef roast.

Ingredients serve 8

1 kg potatoes
1 tbls fresh thyme leaves
1 tsp minced garlic
1 tsp sea salt
¼ tsp black ground pepper
¼ tsp ground nutmeg
2 tbls butter
½ cream (115ml)

Method

Place the potatoes in a large pot with salted water and bring covered to the boil over medium heat. Reduce the heat and simmer for approx. 20 minutes. Place cream, butter, garlic and thyme in a small saucepan and bring to the boil, remove from the heat. Drain the potatoes and return to the pot. Pour the liquid mixture into the pot, add salt, pepper and nutmeg. Mash anyway you like, I used an electrical whisk.

Note: For extra flavour add shredded cheese to the mash or sprinkle cheese on top such as cheddar.
