Classic Drinking Chocolate

A traditional warm drink containing chocolate, vanilla and cinnamon the original unique way it in which it was served was with a stick of cinnamon in the cup, the hot chocolate poured delivering a calming drink.


Ingredients serve 4

½ tsp ground cinnamon
55 g chopped dark chocolate (60%)
3 tbls warm water (60ml)
570 ml milk
140 ml cream
55 g sugar
1 tsp vanilla sugar or extract

Method

Place the chocolate and water in a pot and melt on low heat while stirring. Bring the mixture to the boil and remove. Pour milk, cream, sugar and vanilla in a saucepan cook over medium heat until it forms small bubbles, approx. 90ºC.  Pour the milk mixture into the chocolate and whisk together. Pour the hot chocolate into the cups and drizzle some cream on top. Serve straight away.

Note: Use 1 vanilla pod instead of vanilla sugar in the milk, if using a cinnamon stick in the cup omit adding extra cinnamon.
