Zesty Chicken Patties with Lemon Thyme Braised Potatoes

Lemon Thyme has glossy green foliage and distributes a soft herbal thyme flavour along with a delicate essence of lemon, without the sharp tang obtained from English thyme. It can be used in any recipe calling for the use of lemon and added to a marinade which is great with fish or chicken.

Ingredients serve 4

500 g chicken mince
6 finely chopped spring onions (120g)
1 cup finely chopped fresh coriander leaves (40g)
1 tsp minced ginger
1 tsp cayenne pepper
¼ tsp sea salt
1 egg
1 oven roasted red capsicum finely chopped (200g)
1 lime zest and juice
1 cup breadcrumbs (100g)
1 tbls oil

Method

Place all ingredients except the oil in a bowl and combine to an even mixture. Make patties out of the mixture and place on a frying pan with the oil and cook for approx. 5 minutes on each side. Serve with lemon thyme braised potatoes.

Note: Lemon Thyme is an excellent ingredient for herbal tea. Place 5 fresh leaves in a cup of hot water and let them steep for approx. 5 minutes. Remove and discard the leaves with a teaspoon. For a sweeter flavour add 1 teaspoon of honey.
