Apple Turnovers with Cream

A turnover is a variety of baked or fried pastry made by placing a filling on a piece of dough and folding the dough over. Turnovers can be made savoury or sweet in half round or triangle shapes. I make these apple turnovers with puff pastry, but they can also be made with shortbread.

Ingredients

1 tin pie apple (400g)
30 g sultanas
40 g caster sugar
¼ tsp ground cinnamon
Puff pastry

Method

Preheat oven to 180ºC. Place apple, sultanas, sugar and cinnamon in a bowl and mix evenly. Roll out some puff pastry on a kitchen bench and cut round pieces approx. 12 cm. Place 70 grams of the apple mixture in the middle of the puff pastry. Fold pastry over and place on a baking tray. Bake in the oven for approx. 25 minutes. Allow cooling before cutting turnover open and fill with whipped cream. Sprinkle with some icing sugar.

Note: Other fillings can be used such as apricot, pear, pineapple or a mixture.
