Railway Sleepers Choux Pastry

This is a dessert made with choux pastry called Walesstang in Denmark resembling a railroad track and usually sold without any filling. The extended flavours from custard, cream with sweet icing and bittersweet jam or jelly on top makes this choux pastry complete.

Ingredients

Puff pastry
Choux pastry (recipe)
Vanilla custard
Whipped cream
White fondant
Red currant jelly
Almond flakes

Method

Preheat oven to 200ºC. Make a choux pastry and put in a piping bag with a star nozzle. Place a strip of puff pastry onto lightly greased baking trays and pipe choux pastry in a zigzag motion on top.  Pipe a line at each side of the piped choux and drizzle some almond flakes. Bake in the oven for approx 20 minutes and allow cooling before cutting horizontal in half. Fill with custard and some cream on bottom layer. Place top layer on the cream and spread some white fondant along the track. Pipe some jelly on the fondant and cut into slices.

Note: If red currant jelly is not available use plum, raspberry or strawberry jam.
