Apple and Cinnamon Muffins

Apples and cinnamon are a typical flavour combination in cooking and it seems everyone has a favourite cake or dessert with this mixture. These are lovely and moist muffins where nuts such as walnuts, pecans and almonds can be added.


Ingredients make 6

100 g vegetable oil
90 g brown sugar
3 eggs
215 g self raising flour
½ tsp ground cinnamon
140 g shredded apples

Method

Preheat oven to 180ºC. Mix together oil, sugar and eggs in a bowl until combined. Blend flour and cinnamon and mix. Fold in apples, mix until smooth and scoop or pipe mixture into a paper cup filled muffin tray. Bake for approx. 25 minutes.

Note: Try shredded pear, raisin and nut, date, ginger and some bran or cinnamon sugar on top. Substitutes for cinnamon are half amount of ground nutmeg, allspice, ginger, cardamom or cloves.
