Blackberry Apple and Milk Chocolate Muffins

Blackberry (known as black raspberries) is a combined fruit, a collection of numerous drupes which is a type of fruit with the outer fleshy part surrounding a seed. The blackberry leaves are used to make tea and are used to treat inflammation of the mouth and throat.


Ingredients make 36

170 g blackberries puree
110 g oil
70 g. caster sugar
50 g. eggs
200 g self raising flour
70 g. chopped fresh apple
50 g finely chopped milk chocolate

Method

Preheat oven to 180ºC. Blend blackberry puree, oil, sugar and eggs until combined. Add flour and mix until smooth. Blend together pineapple, mint and dried apricot and add to mixture, scope or pipe mixture into a non stick muffin tray such as silicon or a paper cup filled muffin tray. Bake for approx. 25 minutes.

Note: Try other fruit such as cranberries, raspberries and boysenberries.
