Tabouli Salad

This classic delicious Arabian salad is traditionally made with bulgur, tomatoes, cucumbers, parsley, mint, onion and garlic. It is seasoned with olive oil, lemon juice. Tabouli is pleasing on its own or served with lamb or fish.


Ingredients serve 4

½ cup bulgur (115g)
250 ml water
3 ripe deseeded finely diced Roma tomatoes
1 deseeded finely diced Lebanese cucumber
3 finely chopped spring onion
1 bunch finely chopped parsley leaves
1 bunch finely chopped mint leaves
1 lemon zest and juice
¼ cup extra virgin olive oil

Method

Place burgul and water in a saucepan over medium heat and bring to the boil. Remove from the heat and allow cooling. Drain excessive water and place into a large bowl. Add tomatoes, cucumber, spring onion, parsley, mint and lemon zest. Blend the mixture until combined. Place lemon juice and olive oil in a bowl and combine, season with salt and pepper. Add dressing to the salad and combine. Serve with Lebanese flat bread and Kalamata olives.


Note: Keep Tabouli salad stored in a closed container in the fridge, couscous may be used instead of bulgur.
