Slow Cooker Chicken Noodle Soup

This is a classy dish most people consider an essential comfort food with great flavours. 



Ingredients serve 10

2 tbls oil
1 tbls minced garlic
300 g brown onion
750 g diced chicken breast
4000 ml chicken stock
250 g sliced baby carrots
60 g chopped spring onion
100 g diced red bell pepper
100 g diced green bell pepper
2 tbls dried thyme
2 tbls mixed herbs
2 tsp salt
200 g sliced white mushrooms
375 g uncooked egg noodles

Method

Place oil and onion in a large saucepan over medium heat and cook until soft. Add garlic and chicken, sauté for approx. 5 minutes. Place the chicken and onion in a large slow cooker. Add the remaining ingredients except the mushrooms and noodles. Cook on low for 7 hours, add mushrooms and noodles. Cook for 1 hour and serve.


Note: Try adding other ingredients such as ginger, shallots, broccoli, corn, peas, celery, leek, chives and parsley.
