Muesli and White Chocolate Chip Muffins

These healthy muffins are perfect for breakfast or morning tea.


Ingredients

125 g soft butter
135 g brown sugar
2 eggs (100g)
375 g milk
240 g muesli
320 g self raising flour
180 g white chocolate chip

Method

Preheat oven to 180ÂșC normal bake. Place butter and sugar in a large bowl. Beat until creamy and blend the eggs in. Add milk and muesli, combine. Add flour and blend until consistently mixed. Blend chocolate in the mixture and mix. Spoon the batter into paper cup filled muffin tins. Bake in the oven for approx. 30 minutes. Allow the muffins to cool in the tins for 5 minutes before removing.


Note: Drizzle some sesame seeds or oat bran on top of the muffins before baking.
