Blue Cheese Fig and Lemon Thyme Scones

These are fantastic savoury scones and perfect anytime of the day.

Ingredients make 15

600 g self raising flour
½ tsp black ground pepper
10 g salt
100 g unsalted butter
400 ml milk
200 g blue cheese
150 g finely chopped dried fig
1 tbls finely chopped lemon fresh thyme leaves

Method

Preheat oven to 200ºC fan forced (220ºC normal bake). Combine flour, pepper and salt in a large bowl. Cut butter into small cubes and rub into the flour mix with your hands. Place milk, crumbled cheese, figs and lemon thyme in another bowl and combine. Add liquid mix to dry mix and combined to dough. Turn onto a lightly floured surface and pat the dough into a 3 cm thickness. Cut out the scones with a 5cm scone cutter and transfer to a lightly greased or floured tray. Space approx. a centimetre apart and bake for approx 12 min. until golden brown on top and cooked through.


Note: Try other cheeses and dried fruits such as Feta cheese and dates.
