Italian Beef Burger

This burger is bursting with Italian flavours, oregano, basil, parmesan and tomato. An addition of 2 tsp minced garlic will enforce the essence of Italy.

Ingredients for 8 patties

4 tbls tomato paste (100g)
2 eggs (100g)
1000 g beef mince
2 onions finely chopped (350g)
60 freshly finely chopped basil leaves (40g)
30 freshly finely chopped oregano leaves (15g)
1 cup breadcrumbs (90g)
60 g finely grated parmesan cheese
1 tsp salt
½ tsp sea salt

Method

Mix tomato paste and eggs together in a large bowl, add the rest of ingredients and blend until well combined. Divide the mixture into eight even sized balls and make into patties. Fry on an oiled frying pan or BBQ for approx. 4 minutes on each side. Halve the Focaccia buns and place a lettuce leaf on the bottom half. Place a cooked beef patty on top with caramelized onion, tomato sauce and sliced tomatoes. Positioned the lid and transfer to a plate and serve with parsley braised potato and cracked pepper.

Note: The patties can be frozen wrapped individually in baking paper and placed in a plastic bag before freezing. It is an excellent idea to label and date items placed in the freezer and fridge.
