Gingerbread Dough

In December every year C.EX Coffs holds a member’s Christmas party for which I make the Christmas fruit cake used for dessert plus a display cake with scenery for cutting. Below is the 2011 Christmas cake with gingerbread trees, men, snow and canes.


Ingredients for gingerbread dough

300 g brown sugar
1000 g golden syrup
250 g butter
100 g eggs
1300 g plain flour
20 g baking powder
10 g soda
30 g mixed spice
40 g ground ginger

Method

Preheat oven to 160ºC. Mix sugar, syrup and butter in a bowl, add egg and combine. Blend the dry ingredients and mix into the syrup mixture until dough is formed. Roll the dough out on a floured table to an approx. thickness of 4mm for trees, cookies and gingerbread men. Stamp with a cookie cutter and place on trays with baking paper and bake for approx. 12 min.
