Banana Apple and Date Scones

These sweet fruit scones are excellent at breakfast or morning tea.


Ingredients make 15

600 g self raising flour
100 g caster sugar
4 g salt
1 tsp mixed spice
100 g unsalted butter
200 g milk
200 g banana puree
125 g diced apples
100g chopped dates

Method

Preheat oven to 200ºC fan forced (220ºC normal bake). Combine flour, sugar, salt and mixed spice in a large bowl. Add the butter and use your hands to rub into the flour until it resembles bread crumbs. Place milk, banana puree, diced apples and dates in a separate bowl before adding it to the flour mixture. Mixed into a dough, turn onto a lightly floured surface and press out to a thickness of approx. 25mm. Cut scones with a cutter 5 cm. in diameter. Place on lightly greased flat baking tray and bake in the oven approx. 12 min. Dust with icing sugar.


Note: Use chopped pears or pineapple instead of apple.
