Basic Plain Pancakes

Pancakes are the simple way to make quick bread using the same base for both sweet and savoury dishes.


Ingredients make 8

150 g plain white flour
1½ tsp baking powder
¼ tsp salt
250 ml milk
1 egg
2 tbls melted butter or oil

Method

Place flour, baking powder and salt in a bowl and mix. Add milk and egg and whisk evenly. Add melted butter and combine mixture. Heat a frying pan on medium heat with a little butter. Pour batter in the warm pan and cook for approx. 2 minutes and turn over and cook a further 1 minute. Place on a plate in a stack until all batter is used. Serve straight away with your favourite toppings or cover with cling wrap and store in the fridge until needed. Heat cold pancakes slightly in the microwave.

Note: Use a ladle or a jug to pour an even amount of batter in the pan each time you make a pancake. For storing allow pancakes to cool and then pack in bags, seal and freeze.
