Fresh pumpkin puree makes for great muffins and can also be made into a loaf.
Ingredients make 15
150 g eggs
150 g vegetable oil
500 g Pumpkin puree
400 g brown sugar
450 g self raising flour
2 tbls mixed spice
1 tsp salt
Method
Preheat oven to 180ºC. Grease muffin cups or line with paper cups. Lightly whisk eggs and oil in a bowl. Add pumpkin puree and brown sugar. Mix until combined. Mix flour, mixed spice and salt in a bowl. Blend dry mixture into wet mixture until unified. Place mixture into muffin cups and bake for approx. 25 minutes.
Note: A very good base muffin recipe which can be added other ingredients such as dried fruit and nuts.
