Orange and Poppy Seed Muffins

This is an easy muffin to make with a light and airy texture and a great citrus flavour.

Ingredients make 13

150 g eggs
275 g milk
75 g orange juice
2 tsp orange zest
190 g melted butter
230 g caster sugar
1½ tbls poppy seeds
600 g self raising flour

Method

Preheat oven to 180°C and spray the non stick muffin pans oil. Place eggs in a large bowl and whisk lightly. Whisk in milk, orange juice, orange zest and melted butter until combined. Add sugar and poppy seeds before blending the flour in. Stir until combined and place batter in the prepared muffin tins. Bake for approx. 25 minutes. Remove the muffins from the oven and turn out of the tin onto a cooling wire.

Note: A good citrus base muffin recipe which can be added other ingredients such as dried fruit, nuts and choc chip.
