Snapper Fillets on Corn Fritter Salad

The Australasian snapper is a species of porgie found in coastal waters of New Zealand and Australia. It is highly valued as an eating fish and though it is known as snapper it does not belong to the Lutjanidae family. Their mild flavored taste and flaky texture make them popular with diners who have a desire for fish.




Ingredients

2 Medium Snapper fillets
1 egg
Breadcrumbs
Olive Oil
Lemon
Salad
Parsley
Oil
Corn fritters

Method

Lightly whisk the egg and dip the Snapper fillets then coat the fillets in bread crumbs.
Fry them on a pan in a little olive oil.
Arrange cooked fillets on a Corn Fritter Salad.

Note: Snapper is a very versatile fish for cooking. You can cook it in a frying pan, on the barbeque, grill, steam or bake it.
