“Pure Peppermint” Mojito Cocktail

This cocktail was served with the Rendezvous Chocolate in the High Tea Challenge using Dilmah “Pure Peppermint Leaves” Tea from the T-series and has a great peppermint tea flavour. Dilmah describes the tea as “Peppermint is a natural caffeine free cooling and uplifting beverage. The infusion of peppermint leaves with a touch of honey is an ideal palate cleanser.”


Ingredients Serves 1

45 ml Bacardi (1.5 standard drinks)
Dilmah Pure Peppermint Tea Leaves
5 fresh organic mint leaves
1 Lime
15 ml sugar syrup
Crushed ice
30-45 ml soda water
Hurricane glass

Method

Infuse Bacardi with Dilmah Pure Peppermint leaf for 72 hours in sealed container. Strain rum 5 minutes before assembling cocktail. Squeeze ½ lime in bottom of hurricane glass and add 15mls of sugar syrup. Cut ½ lime into quarters and add to hurricane. Add 45mls of infused Bacardi. Clap mint in hand to ignite mint aromas. Fill with crushed ice halfway up glass. Use bar spoon to mix all contents in glass ensuring all ingredients are mixed and pulled to top. Fill remainder of glass with crushed ice and top with soda water. Garnish with mint sprigs and lime zest.
