Bavarian Strawberry Mousse Cake

A strawberry liqueur infused vanilla sponge layered with strawberry mousse and decorated with whipped cream is a perfect dessert or cake any time of the year when strawberries are available.


Ingredients serve 14

8 gelatine leaves
1 vanilla sponge (30 cm)
500 g strawberries
250 g caster sugar
1000 g cream
Strawberry liqueur
250 g strawberries for the top
Strawberry jelly
Whipped cream for decoration

Method

Cut sponge in 3 layers and drizzle strawberry liqueur on each layer. Place gelatine leaves in a bowl with cold water. Place strawberries and sugar in a saucepan and bring to the boil. Simmer for approx. 3 minutes and purée with a stick blender; allow cooling to 45ºC. Drain the water from the gelatine and add to the strawberry purée. Whip cream to a soft peak and fold in the strawberry mixture. Place the bottom strawberry liqueur infused sponge layer on a cake tray. Spread strawberry mousse evenly on bottom sponge layer with another layer of strawberry liqueur infused sponge on top. Spread strawberry mousse evenly on the second sponge layer and place the last strawberry liqueur infused layer of sponge on top. Spread the last strawberry on top. Allow cooling for at least 2 hours in the fridge before placing cut strawberries on top. Glaze with strawberry jelly and allow cooling before dividing and cutting the cake into14 pieces. Decorate with whipped cream.

Note: Strawberry liqueur is red coloured made with strawberry puree, lemon, sugar and alcohol such as aquavit or vodka.
