Fruit Mince Scones

It’s starting to look a lot like Christmas and off course each day ought to be like Christmas, it is the occasion for being happy, a moment in time when you think of people you love and the people who love you, I also adore the aroma of exotic cooking spices around the house.

This is one of the recipes I developed in my campaign “Scones of the world” at CEX Coffs Harbour, it is packed full of the aroma and flavour of Christmas.


Ingredients make 9

280 g self raising flour
1 tsp mixed spice
20 g brown sugar
240 g cream
140 g fruit mince

Method

Preheat oven to 200ºC fan forced (220ºC normal bake)
Place flour, mixed spiced, sugar in a bowl and combine. In another bowl combine cream and fruit mince add this mix to the flour and combine with a scraper or hands. Don’t over mix which will make the scones tough. Place on a workbench dusted with flour and roll or press out to a thickness of approx 25mm. Cut scones with a cutter 5 cm. in diameter. Place on lightly greased flat baking tray. Bake in the oven approx 12 min. Dust with icing sugar and serve hot or cold with custard or whipped cream.

Note: Fruit mince can be bought in the supermarket.
