Forloren Hare (Mock Hare)

Meatloaf is a savoury dish made of minced meat with a variety of other ingredients and spices baked in a loaf shape. Forloren Hare (Mock Hare) is a traditional Danish pork meatloaf dressed up as a game meal with bacon, juniper and redcurrant jelly. Juniper berries are traditional to Scandinavian cooking, the aroma is pleasantly woody, refreshing with notes of pine and gin. The berries are the fruit of the evergreen juniper shrub (juniperus communis) it takes two to three years to mature gradually turning from green to a dark blue, once hand picked they are dried and turn almost black.



Ingredients for meatloaf

500 g Pork mince
1 tsp salt
¼ tsp black ground pepper
½ tsp yellow mustard powder
½ tsp ground ginger
4 junipers crushed
1 egg
5 tbls breadcrumbs (40g)
1 onion shredded or finely chopped (100g)
100 ml milk
6 long slices bacon ((125g)

Ingredients for sauce

200 ml Stock
100 ml cream
1 tbls red currant jelly

Method

Place pork mince, salt, pepper, ginger, egg, breadcrumbs, junipers, onion, and milk in a bowl. Mix evenly and make into a loaf shape and place on a deep baking or casserole dish. Place bacon strips closely together on top of the meatloaf. Place the baking dish in the oven at 225ºC for 15 min. Place red currant jelly in bowl and whisk smooth add stock and cream while whisking to make an even mixture. Pour the sauce mixture in the baking tray around the meatloaf. Turn the oven down to 175ºC and cook for approx. 35 min. When cool slice, serve with mashed potatoes and vegetables.

Note: If you prefer a large volume of sauce add more liquids to the baking tray with additional sauce mix. Freeze the uncooked meatloaf in a closed plastic bag and defrost in the fridge overnight. The meatloaf can be used cold as filling for a sandwich or pan fried.
