Slow Cooked Chicken and Beans

This is an excellent nourishing meal with abundance of flavours containing tomatoes, chicken, beans and herbs.


Ingredients serve 10

1000 g diced chicken breast
200 g sliced mushrooms
1 diced yellow bell pepper (250g)
1 diced red bell pepper (250g)
2 x 400 g can cannellini beans with juice
2 x 400 g can diced tomatoes
2 tsp salt
1 tsp black pepper
1 tbls dried basil
2 tsp dried thyme
2 tsp dried oregano

Method

Place all ingredients in a large slow cooker and blend evenly. Cook on low for 8 hours or 4 hours on high. Serve with chopped parsley and crusty bread or baked potato chips and salad.

Note: You can add other ingredients such as garlic, sage and tarragon.
